1. Add water first to knead the flour

It varies from person to person. Add water first and then stir the dough slowly. If there is a proportion, it can be done in one go. If there is no proportion, it will be troublesome to add noodles and water repeatedly.

2. Add the flour first

I like to add the flour first and then the water. This method is more troublesome and requires two people to work together, because all your hands are covered with flour, it is impossible to mix the flour with one hand and add the flour with the other.


What are the techniques for kneading dough?

1. When kneading dough, you must use warm water to ensure that the protein molecules in the dough are not destroyed, so that the dough that comes out is particularly strong and elastic, and is whiter than other water temperatures. And the texture of noodles mixed with warm water will also be different. Such noodles will be easier to shape, and it will be relatively easier to roll the noodles.

2. Please note that when rolling out the dough, you can pour some cooking oil on the board and rolling pin.

This has two advantages:

① It prevents the dough from sticking to it;

② It allows the moisture in the dough to be fully locked, so that the moisture does not evaporate and the pancakes made will be fragrant and soft. And if you apply oil in advance, you can apply less or even no oil when it is actually baked. This will reduce the amount of oil and make it healthier to eat.

3. Do not use low heat. Heat the pan over medium heat to quickly lock in the moisture in the dough, so that the baked cake will be soft.


Common proportions for kneading noodles

Whether you add water first or noodles first, as long as you have the proportion, it is easy and fast.

Put 500 grams of flour into the dough for noodles, 180-200 ml of water, 200-210 ml for dumpling dough, and 225-250 ml for fermented buns. First add 60%-70% water, then add 20% water, and finally add enough.

How to mix dough better

1. To avoid imbalance in the proportion of water and flour when kneading dough, do not add enough water at one time. Instead, pour the flour into a basin or on the panel, make a groove in the middle, slowly pour the water into the groove one at a time, and stir slowly with chopsticks. When the water and flour are fully mixed and the water is absorbed by the flour, rub the dough repeatedly with your hands to make the flour form many small pieces, commonly known as "snowflake noodles".

2. In this way, the flour will not have time to absorb the water, causing the water to flow everywhere, nor will the batter be sticky all over the hands and pots, making it difficult to operate. Then, sprinkle water on the "snowflake noodles" and stir it with your hands to turn it into small lump-like dough, called "grape noodles".

3. At this time, the flour has not absorbed enough water and has a high hardness. You can knead the dough together into a piece. Wipe off the sticky batter on the basin or panel, then dip your hands in some water to wash off the flour on your hands and sprinkle it on the "grape noodles". You can use your hands to knead the grape noodles into a smooth dough.
